BURO - A tagalog term for "PRESERVED" or "PICKLED".
Burong isda sa kanin is one of Kapampangan's specialty.
Thanks to my mom-in-law for giving me a homemade Buro fresh from Pampanga.
Easy steps on how to cook it:
1. Saute minced garlic, Onions , ginger and chopped tomatoes in hot oil
2. Put the fermented buro and let it simmer for 10 mins
3. Add a pinch of salt and pepper
4. Add 2 tablespoons of fish sauce (patis)
optional: You can also put a a bit of sugar to balance the sourness and saltiness of the buro.
Serve it as a siding or "sawsawan" to a fried or grilled fish or any steamed veggies like okra and talong. It is also best to partner with a crispy hito (catfish).
